Casserole Haricots Verts et Maïs de Sherry Reach | Sherry Reach’s Green Bean and Corn Casserole
Introduction
Creamy baked casserole of French-style green beans and white corn with mayo, sour cream, and cheddar, topped with Ritz crackers or fried onions.
Ingredients
- 1 can French-style green beans
- 1 can white corn
- 1 tablespoon chopped onion sautéed in olive oil (or 1 teaspoon onion powder)
- 1 cup mayo
- 1 cup sour cream or crème fraîche
- 1 can cream of celery soup
- 1 cup shredded cheddar cheese
- 1/2 sleeve crushed Ritz crackers or fried onions
- Salt and pepper
Directions
- Heat oven to 350°F. Grease a casserole dish.
- Rinse beans and corn in a colander; drain well.
- In a mixing bowl, combine beans, corn, onion, mayo, sour cream, cream of celery soup, and cheddar. Season with salt and pepper. Transfer to prepared dish.
- Top with crushed Ritz crackers or fried onions. Bake about 30 minutes until bubbly and browned.
Tips
- Drain vegetables thoroughly to avoid a watery casserole.
